OLEORESINS AND SOLURESINS
TRURESIN ®
Classical flavoring, with natural spices, has presented a series of obstacles in the processes of industrial manufacture. To overcome those difficulties, at present we use oleoresins: i.e., concentrated compounds extracted with organic solvents from natural spices.
Essentially, oleoresins are constituted by essential oils, organically soluble resins and various non-volatile fat acids, as well as other materials present in the original spice. Non-volatile components, such as those that contribute to the pungency of pepper, are almost as important as volatile essential oils, if full and rounded pepper flavor is desired. Resins and fat acids act as natural fixatives for the more volatile components of the essential oil.
TRURESIN ® is Fritzche's trademark for the most complete line of oleoresins
Some of the advantages of using Truresins® are:
flavor uniformity and standardization
hygiene: they are free of microorganisms and other contaminants
enzyme-free: they have natural antioxidants
fuller flavor and more body than those of a pure essential oil
longer life-span
they demand less storage space than that required to store the equivalent quantity of natural spice.
When flavor defines the success of a product, Truresin® is the answer to obtain the best taste at the lowest cost.
Equivalences:
The equivalence of these extracts is defined by the kilograms of Truresin® that are required (generally between 1 and 5 kilograms) to match the aroma and taste of 100 kilograms of fresh natural spice. These values are subject to individual preferences and are suggested just as a guide for the spice consumer.
